Refrigerator Pickles
The recipe below will make one pint jar of refrigerator pickles.
2 pickling cucumbers
½ cup water
½ cup white vinegar
1/8 cup sugar
1 t. kosher salt
1 t. pickling spice
1 sprig of dill
2 cloves of garlic
¼ t. red pepper flakes (optional)
Slice washed cucumbers and place into clean pint jar. Mix water, vinegar, salt, pickling spice, dill, garlic and red pepper flakes. Pour on top of cucumbers. Refrigerate 24-48 hours. Enjoy!

Roasted Oven zucchini chips
One medium Zucchini sliced in to 1/4 inch wide rounds
Shredded or grated Parmesan cheese
Salt and pepper to taste.
Put Zucchini rounds on parchment paper on a baking sheet.
Place about 2 tablespoons on Parmesan cheese on zucchini rounds. You can add more or less to cover tops of rounds according to your taste. I like a lot of cheese on the tops. .
Add salt and pepper to taste.
Bake at 350 degrees for 10-15 minutes. enjoy
Try to make zucchini rounds thinner to make a crispier chip

Pumpkin Seeds
Preheat oven to 350 degrees
Clean off pumpkin seeds, Use a bowl of cool water and swish pumpkin seeds until the pumpkin pulp is washed off
Dry off seed as much as possible.
At this stage you should toss seeds with a little oil, you can use avocado, sunflower or olive oil.
Add a bit of salt or toss with desired spices you wish to flavor the seeds.
Place seeds on a baking sheet with parchment paper in a single layer
put in oven for 10-20 minutes depending on how many seeds.
let cool and enjoy. Put in an airtight container to store them. use as snack or on salad or garnish your favorite dishes.
Fried apples slices

Fried Apple Slices
- 6 apples
- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 1 tsp. cinnamon
Directions
- Peel, core and slice the apples into even slices.
- Melt the butter in a large skillet ( I like cast iron) over medium heat.
- Add the apples, cover, and cook over low heat for 15-20 minutes, until the apples are soft. Stir often so they don’t burn.
- Mix the white sugar, brown sugar, cinnamon, nutmeg and salt together in a bowl.
- Add to the apples and stir. Cook for another 5-10 minutes until the sugar is dissolved and are syrupy.
- Serve over ice-cream, or as a side.
